Holy Grail Lo-Dough Keto Pancakes ​Holy Grail Lo-Dough Keto Pancakes​Let me introduce you to my keto version of Lo-Dough low-carb fluffy scotch pancakes - in my opinion this is the holy grail of low carb pancake recipes (sorry zero-carbers, this one isn’t for you).​Serves: 1Yields: 3-4 PancakesPrep Time: 10 MinutesCook Time: 10 Minutes​Ingredients:1 piece of Lo-Dough, blitzed to fine crumbs1 large egg, beaten60ml of unsweetened almond milk2 heaped teaspoons of granulated erythritol (or other sweetener of choice)~ 1 tbsp unsalted butter (for cooking)~ 2 tbsp sugar free maple syrup (for topping)​Nutritional Info:(per serving of 3-4 pancakes)Calories: 218 caloriesFat: 17 gNet Carbs: 3 gFiber: 10 gProtein: 9 g​Method:In a bowl, mix the Lo-Dough flour, beaten egg, sweetener and 60ml of milk into a thick batter.Heat up a frying pan on a low heat and brush with melted butter (or just add butter and swoosh it around to coat the pan as it melts)Spoon the batter into the pan to your preferred size (palm size worked well for me)Once ready to turn (edges browned/top bubbling/stays in one piece), lift pancake with a spatula and before flipping over, quickly add a bit more butter to the part of the pan where it came from.Once ready, repeat until batter runs out and drizzle sugar free maple syrup over pancakes and enjoy!
