Modified Scrambled Egg as Loaded Mashed Potato Substitute My cooking skills are pretty basic, so maybe this is something everyone already knows and I’m just the last one in on the joke, but I thought I would share it just in case. It’s a nice change from mashed cauliflower :)This way of cooking the eggs makes something with the texture somewhere in between mashed potatoes and cheese grits, and is a great vehicle for mashed potato type toppings.Whisk together 2 eggs, salt, pepper, and a dash of heavy whipping cream until slightly aerated.Fold in a quarter cup of shredded cheese of your choice.Pour into greased frying pan. Cook over medium heat, stirring constantly. Keep scraping the pan. This keeps it from forming normal scrambled egg style clumps.After a couple of minutes it will begin to come together into something that, as previously stated, looks like it’s halfway between potatoes and grits.Great with sour cream (you don’t need much!), bacon crumbles, and/or chives. :)
