My take on Pork Taquitos http://bit.ly/2EhnCdO taquitos came about because I roasted a pork shoulder over the weekend and had about 4 pounds of pulled pork that I needed to eat. Just eating it on its own gets boring, so I thought why don’t I make them into taquitos! I found some high fiber wraps at Walmart that have 5g net carbs per wrap and I purchased a deep fryer a couple weeks ago that was dying to cook more than cheese sticks. This recipe is for two taquitos which comes out to be a good meal for one person.Mexicasian Pork Taquitos (1 serving)2 High Fiber wraps 5oz Pulled Pork (dry, no sauce) 1.5oz Cream Cheese (full fat) 1.5oz Mozzerella (or MontereyJack/Pepperjack) 1tbsp Ground Fresh Chili Paste 1tsp Hoisin Sauce 1tsp Soy SaucePre-heat your frying oil to 375 degrees. Grab a microwave safe bowl. Add the cream cheese and mozzarella first, then add the chili paste, hoisin, and soy sauce. Finally place your pork on top and microwave for 30-40 seconds depending on how your microwave cooks. After microwaving, using a fork, mix everything together very well. Take your time with this step and make sure it is mixed well. Now split the mixture evenly between your wraps and spread thinly across ¾ of the wrap, leaving just the edge exposed so that the wrap will close (example http://bit.ly/2T1vqul ). Roll them up tightly and secure the edges with two toothpicks (I forgot the first time I tried and they split open. Don’t forget!) Once your oil is hot, place the taquitos into your oil and fry for 2 minutes. If you desire them to be crispier, add another 30-60 seconds depending on how crisp your heart desires.
